These sugar cookies are so good! They do not have an effect on my levels. Next time I will make them thicker and see how they turn out. ❤

These are so delicious! This is my first time making these and they turned out amazing! The crunch and the cream were perfect! They’re great for a mid day snack or for dessert after supper.
I absolutely love frappes but being T1D I can’t have them anymore, well until I made my own. This is the best frappe I’ve ever had and it is only 2 carbs per glass. It’s not pink that’s just the cup 😂

This is my go to for a snack or something sweet, I absolutely love it. I make 3 different kinds, white chocolate, vanilla and banana cream. I take a box of sugar free jello pudding and mix it with 2 cups heavy whipping cream and place in the refrigerator for storage (which isn’t very long 😂) it is truly amazing!

These are one of my go to sweet snacks, they’re so delicious! I take pecans and break them into small pieces on a parchment paper cookie sheet, then I make a caramel and drizzle that on top I allow it to cool in three refrigerator for about 5 minutes while I melt down some sugar free dark chocolate chips and butter. Once the caramel is set I add the dark chocolate and place in the refrigerator again for about 30 minutes. Once everything hardens I cut into desired pieces and store in a airtight container in the refrigerator. You can do these in small clusters or just spread it all over the pan then cut them into squares I’ve done both.

Here is my lunch for today, I decided to make a mini pizza on a spinach tortilla with pepperoni and ham. It takes maybe 10 minutes to make from start to finish. Take a tortilla (I use any low carb 3-5 grams of carbs each shell) a spoon full of sauce maybe 2 then add cheese, pepperoni and ham then bake it until the cheese is done. I use my cuisinart air fryer toaster oven to make these and I set the temp at 250-300 on bake. The tortilla is not floppy or very hard it holds the pizza well as long as you don’t over fill it.
Thanks for joining me!
In this blog I will tell you about different foods that I’ve grown to love and that are diabetic friendly. ❤
